Pachelli’s Kitchen Staples: Hard Boiled Eggs

This kicks off our Pachelli’s Kitchen Staples series where nutritional chef and wellness counselor, Sarah Pachelli teaches us what we should always have on hand in the kitchen and why. Get ready to take some notes people, here she goes!


Hard-boiled eggs are the perfect food because they contain a bit of all the nutrients we need. They are an ideal protein pick-me-up, travel well, last a long time in the fridge, and are super inexpensive. You can hard-boil and pre-peel a dozen on Sunday for easy snack access during your busy week.

In accordance with whole foods consumption, make sure to eat the entire egg, yolk and all. Real talk: the yolk is what fed that little slimy chicken embryo; thus, this golden powerhouse is packed with essential vitamins and minerals. Don’t miss out on these essential nutrients. Also, remember that while eggs are high in cholesterol, they don’t affect blood cholesterol for the majority of people — if anything, eggs increase the HDL (“good” cholesterol) and lower the LDL (“bad” cholesterol).

Eggs are also a useful way to see if you’re actually hungry or if you just want to snack — as in, if you’re truly hungry, an egg will sound satiating, wherein if you’re bored/anxious/sad/angry/wanting to compulsively consume, an egg normally sounds awful. We never want to eat from a place of mindless distraction. Let the egg be thy litmus test.

There are many methods about how to make the most peel-able hard-boiled egg. Here’s my fail-proof, go-to recipe:

One Pot Hard-Boiled Eggs

Bring a pot of water to a boil. Add eggs, a hefty pinch of salt, and let them boil for 8 minutes. Remove from heat and delicately pour out hot water in the sink while drowning the eggs in cold water. Make sure you douse the whole pot in cold water, so the eggs stop cooking. Add a few ice cubes in this now-chilled pot and let the eggs chill for another 8 minutes. Peel your eggs before storing in the fridge. It makes midweek snacking that much easier.
