Whole Wheat Banana Bread


  • 1/2 C coconut oil
  • 1 C coconut sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 C whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 C whole milk yogurt
  • 3 ripe bananas, smashed


Preheat the oven to 350ºF. Grease a 9″x 5″ loaf pan with coconut oil and dust with flour. In a standing mixer bowl, combine the coconut oil and coconut sugar on medium. Add the eggs and vanilla and mix until combined.

In a medium bowl, combine flour, baking soda, and salt and stir into the sugar mixture until smooth. Fold in the yogurt and smashed bananas. Gently mix until combined. Spread evenly into the prepared pan. Bake at 350º for 60 minutes, or until a knife inserted into the center comes out clean.
