Watermelon, Cucumber, and Feta Salad with Lime Vinaigrette



Serves 4

  • 1 cucumber, deseeded and cubed
  • 1 mini seedless watermelon, rind removed and cubed
  • 1/4 small red onion, shaved thinly on a mandolin, soaked in a bowl of water for 10 minutes, drained
  • 1/4 C small cherry tomatoes, stems removed, sliced in half
  • 1 tbsp cilantro leaves
  • Sea salt
  • freshly ground black pepper
  • 1/2 lime, for serving

Feta Lime Vinaigrette

  • 1 lime, juiced
  • 1 tbsp champagne vinegar
  • 3 tbsp olive oil
  • 1 tsp honey (optional)
  • Sea salt
  • Freshly ground black pepper


In a large mixing bowl, combine the cucumber, watermelon, red onion, cherry tomatoes, and cilantro.

In a small bowl, whisk together the lime juice, champagne vinegar, olive oil, honey, sea salt, and black pepper. Add more honey, salt, or pepper to taste.

Slowly pour dressing over the ingredients, tossing to coat. Taste. Season with sea salt and pepper to taste. Add more dressing if necessary. When ready to serve, scoop the salad into individual bowls and top with crumbled feta. Finish with a squeeze of fresh lime juice and some black pepper.
