WATERMELON AND TOMATO SUMMER SALAD

Ingredients

Scale
  • 1/4 of a medium or large watermelon, rind removed, cut into chunks
  • 1/4 of a medium sweet melon-like Galia, Honeydew, or Cantaloupe, rind removed, cut into large chunks
  • 2 1/2 cups of cherry type tomatoes, stems removed, tomatoes cut in half (I love using Sungolds or an assortment of cherry tomatoes in different colors)
  • 57 ounces feta cheese
  • 3 tablespoons fresh mint, thinly sliced
  • 1 tablespoon chives, minced
  • Juice from 2 limes
  • Extra virgin olive oil
  • Sea salt
  • Black pepper

Instructions

On a large platter, place the watermelon, sweet melon, and tomatoes. Crumble the feta cheese evenly on top. Squeeze the juice from 2 limes all over. Drizzle with olive oil and season with sea salt and some black pepper. Sprinkle with the mint and chives to finish.
