WATERMELON AND TOMATO SUMMER SALAD
Ingredients
- 1/4 of a medium or large watermelon, rind removed, cut into chunks
- 1/4 of a medium sweet melon-like Galia, Honeydew, or Cantaloupe, rind removed, cut into large chunks
- 2 1/2 cups of cherry type tomatoes, stems removed, tomatoes cut in half (I love using Sungolds or an assortment of cherry tomatoes in different colors)
- 5–7 ounces feta cheese
- 3 tablespoons fresh mint, thinly sliced
- 1 tablespoon chives, minced
- Juice from 2 limes
- Extra virgin olive oil
- Sea salt
- Black pepper
Instructions
On a large platter, place the watermelon, sweet melon, and tomatoes. Crumble the feta cheese evenly on top. Squeeze the juice from 2 limes all over. Drizzle with olive oil and season with sea salt and some black pepper. Sprinkle with the mint and chives to finish.
