Vanilla Cashew Creamer


  • 1 C raw cashews, soaked overnight
  • 2 C water
  • 1 tsp pure vanilla powder or 1/2 a vanilla bean pod, seeds removed and pod discarded
  • 2 small dates or 1 medium date, pitted


Soak your cashews overnight. Drain them and rinse.

Place the cashews, 2 cups of water, the vanilla powder or seeds, and the pitted dates in a blender. Blend until smooth, about 2-3 minutes. No straining necessary.

Pour into a container and store in the fridge for up to a week. The liquid will become thicker as it cools in the fridge. Enjoy!
