Strawberry Cauliflower Smoothie Bowl
Ingredients
Serves 2
- 1 cup frozen strawberries
- 1/2 cup frozen cauliflower florets
- 1 frozen banana
- 1/2 cup + more as needed, coconut water or alternative milk of choice depending on how thick you like your smoothie bowls
- 1 tablespoon cashew butter
- 2 tablespoon protein powder of choice (I use Tejari Strawberry Protein Powder)
Topping Suggestions:
- Unsweetened Coconut flakes
- Fresh berries like raspberries or blueberries
- Gogi berries
- Chia seeds
- Cacao nibs
Instructions
Place the frozen strawberries, cauliflower, and banana in a food processor or Vitamix blender. Add 1/2 cup liquid of choice, cashew butter, and protein powder. Blend until smooth, adding liquid as needed to reach your desired consistency. Taste. If you need it to be sweeter, add a little honey or maple syrup. Pour into a bowl and top with your favorite toppings.
