Stone Fruit and Tomato Salad with Herbs and Feta



Serves 2

  • 1 plum, pit removed and cut into small wedges
  • 1 nectarine, pit removed and cut into small wedges
  • 1 peach, pit removed and flesh cubed
  • 1 handful cherry tomatoes, stems removed and halved
  • 1 tbsp minced chives
  • Small handful fresh basil leaves
  • Small handful fresh mint leaves
  • 1 lime
  • Good extra virgin olive oil
  • Sea salt
  • Freshly ground black pepper
  • Feta, crumbled


In a medium mixing bowl, place all the stone fruit and the tomatoes. Add the chives, some sea salt, and some freshly ground black pepper.

Squeeze the juice from 1 lime over the mixture and give it a good drizzle of olive oil. Toss to coat. Taste. Add more sea salt or olive oil as needed.

Add the herbs to the mixing bowl and gently toss to coat. Divide the salad into two individual bowls. Finish with feta and serve immediately.
