Pinto Bean and Fried Egg Breakfast
The pan-fried pinto beans are what makes this recipe stand out. It is a fun and absolutely delicious take on breakfast!
Ingredients
Makes 1 serving
- 2/3 C homemade pinto beans
- 2 eggs
- extra virgin olive oil
- 1/2 scallion, thinly sliced
- 1 tbsp cotija cheese, crumbled
- A few cilantro leaves
- Salsa
- 1 flour tortilla
- Sea salt
- Freshly ground black pepper
Instructions
In a small pan, heat the beans through. Once hot, place them on your serving plate. Quickly wash the pan, dry it, and put it back on the stove.
Drizzle some olive oil in the pan. Heat over medium and, once hot, crack two eggs into the pan, sprinkle with sea salt and some black pepper. Fry to your liking (I like my eggs over easy).
While the eggs are cooking, warm your tortilla in another medium pan on the stovetop and set aside. Sprinkle the beans with 1/2 the scallions, top with the fried eggs, sprinkle with the remaining scallions, cotija cheese, cilantro, and salsa of your choosing. Fold your warm tortilla, place it on the side of the plate.
