Overnight Oats Go-Get-Em-Tiger Style

Makes 4 servings

  • 1 cup rolled oats (use gluten free oats to make it GF)
  • 1 can full fat coconut milk
  • 1/2 cup coconut water
  • 1 tablespoon hemp seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla powder

Chia Seed Topping:

  • 2 tablespoons chia seeds
  • 1/2 cup coconut water

Additional Toppings:

  • Raw Almond Butter or Sunflower Seed Butter
  • Nutty Seeded Granola (we will link this to the recipe)
  • Favorite jam (I used Kelly’s Oregon Marionberry jam – we can link to it)
  • Pomegranate seeds or berry of choice

Instructions

In a medium bowl, stir and combine the oats, coconut milk, coconut water, hemp seeds, cinnamon, and vanilla powder. Place it all in a glass container, cover, and place in the fridge overnight.

In another small glass container, stir and combine the chia seeds and coconut water. Cover and place in the fridge overnight.

In the morning, assemble your Overnight Oats bowl. Place a generous scoop of the overnight oats into a small bowl. Top with a tablespoon of chia seed topping, two tablespoons of almond butter or sunflower seed butter, a sprinkle of Nutty Seeded Granola, and a spoonful of your favorite jam. If you want to add some fresh fruit, add some pomegranate seeds or your berry of choice.
