Oatmeal Cookies with Chia, Gojis, and Chocolate Chips

  • 1/2 C whole wheat flour
  • 1/2 C all-purpose flour
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 2/3 C light brown sugar
  • 1 tsp vanilla extract
  • 1/3 C avocado oil
  • 1 egg
  • 1/2 C rolled oats
  • 1 tbsp chia seeds soaked in 3 tbsp water
  • 3 tbsp goji berries soaked in 1 tsp water
  • 1/3 C semi sweet chocolate chips

Instructions

Preheat oven to 350°F. Line two baking sheets with parchment paper. Sift together the flours, baking powder, and a pinch of sea salt.

In a medium bowl, whisk together the avocado oil, brown sugar, egg, and vanilla. Add flour mixture, and stir to combine. Carefully fold in the oats, chia seeds, goji berries, and chocolate chips.

Using about 2 tbsp of dough per cookie, roll into balls; place on two baking sheets lined with parchment paper, 1 1/2-inches apart.

Bake until lightly browned, 15 to 17 minutes, rotating sheets halfway through. Let cool.
