Heirloom Tomato Salsa with Avocado


  • 2 medium heirloom tomatoes, cored and diced
  • 1/2 sweet onion, diced
  • 1 small clove of garlic, minced
  • 12 cilantro springs, leaves, and stems, chopped
  • 1/2 ripe avocado, pit removed and flesh cut into small cubes
  • Juice of 1 lime
  • Sea salt


In a medium mixing bowl, combine tomatoes, onion, garlic, cilantro and avocado. Gently fold together. Add the lime juice and a pinch of sea salt and mix to combine. Taste. Add more lime or salt if necessary. Let salsa sit for 10 minutes at room temperature before serving so the flavors can meld. Enjoy with chips, quesadillas, or as a topping on grilled chicken or fish.
