Heirloom Tomato and Zucchini Sauce
Ingredients
Makes enough sauce for 1 lb of pasta
- 3 tbsp extra virgin olive oil
- 1/2 yellow onion, diced
- 3 garlic cloves, roughly chopped
- 3 heirloom tomatoes, diced
- 1/2 zucchini, diced
- Sea salt
- Black pepper
- Fresh basil
Instructions
In a medium-sized pan over medium heat, place the olive oil and onion. Sauté until the onion is soft and translucent, about 3 minutes. Add the garlic and cook for another minute or so.
Add the chopped tomatoes and zucchini and cook for 15 minutes or until the tomatoes break down into a sauce consistency. Taste and season with sea salt and black pepper. Toss with your favorite pasta or gnocchi, or serve over some grilled chicken or oven-roasted fish. I served it here with some gnocchi and topped the dish with fresh basil leaves.
