Ground Turkey Tacos

Ground Turkey Tacos

  • 1 lb ground turkey, dark meat
  • 2 tbsp avocado or extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsps chili powder
  • 1 tsp cumin powder
  • 1/2 tsp chipotle powder
  • 1 tsp sea salt
  • 1 tbsp tomato paste
  • 1 C chicken broth
  • Warm tortillas
  • Toppings of your choice: feta, shredded Mexican cheese blend, cotija cheese, cilantro, radish, scallions, cabbage, lime, avocado, salsa, hot sauce

Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until the onion becomes translucent and softens. Add the turkey and garlic. Cook, breaking up the meat with the side of a spoon, just until meat is cooked through, about 5 minutes. Stir in chili powder, cumin, chipotle powder, sea salt, and tomato paste and cook for 1 minute.

Add the chicken broth and simmer, stirring occasionally, until liquid becomes thick and clings to meat. Prepare the toppings of your choice for taco assembly. Warm your tortillas, and let each person assemble their taco as they like. Enjoy!
