Gluten Free Peanut Butter Energy Balls
Ingredients
Makes 12-14 1-inch balls
- 2/3 C creamy peanut butter
- 1 C gluten free rolled oats (I use Bob’s Red Mill)
- 1/2 cup ground flax seed
- 2 tbsp raw honey
- 1/2 cup cacao baking chips (or semi-sweet chocolate chips if that is the only thing you can find. I was able to find a 100% Cacao Unsweetened Baking Chips by a brand called Pascha)
Instructions
Place all the ingredients in a medium mixing bowl. Stir to combine. Place in the fridge for 15 minutes to harden.
To make into 1 inch balls, you kind of have to squeeze the mixture together rather than roll it. It tends to crumble if you try to roll it in your hands. Store in the fridge for up to a week.
