Chicken and Veggie Salad with Apple Cider Vinaigrette

Serves 2-4

  • 1 head of lettuce, leaves washed and dried
  • 2 handfuls of sprouts
  • 2 carrots, peeled and cut on a diagonal
  • 1 watermelon radish, thinly sliced
  • 2 scallions, thinly sliced into rounds
  • 8 snap peas, thinly sliced
  • 1 cooked chicken breast, thinly sliced
  • 1/21 avocado depending on size, cubed
  • Sea salt
  • Freshly ground black pepper

Apple Cider Vinaigrette

  • 1 tbsp grainy mustard
  • 3 tbsp apple cider vinegar
  • 2 tbsp maple syrup or raw honey
  • 1/2 C extra virgin olive oil
  • Sea salt
  • Freshly ground black pepper

Instructions

Place your lettuce in a large salad bowl. Top the lettuce with the chicken and sprouts. Next, sprinkle on the carrots, scallions, radish, snap peas, and avocado.

To make the vinaigrette, whisk together all the ingredients in a bowl until the dressing has emulsified. Season with salt and pepper to taste. Right before serving, drizzle on the apple cider vinaigrette, some sea salt, and freshly ground black pepper.
