Cacao Chia Seed Pudding



Serves 1

  • 3/4 C almond milk (homemade is preferable)
  • 1/4 C chia seeds
  • 2 tsp coconut sugar
  • 2 tsp cacao powder
  • 1/8 tsp cinnamon
  • 1/2 vanilla bean, scraped
  • Pinch of sea salt
  • Optional: goji berries, unsweetened shredded coconut, cacao nibs


Pour the almond milk into a bowl that is large enough for mixing. Add in all the other ingredients and stir for a couple of minutes until the ingredients are well combined and the pudding starts to thicken.

Eat right away or refrigerate for a couple of hours to get a thicker pudding. Top with goji berries, unsweetened shredded coconut, and cacao nibs.
