Baby Burritos

Makes 2 Baby Burritos

  • 2 eggs, whisked and seasoned with a pinch of sea salt
  • 2 teaspoons neutral oil, (I usually use grapeseed or avocado oil)
  • 2 flour tortillas (I normally use Tortillaland Uncooked Flour Tortillas)
  • Cheddar cheese, shredded
  • Pickled red onions
  • Avocado, pitted and thinly sliced
  • Hot sauce (we are obsessed with Zabs)

Instructions

In a medium-sized fry pan, heat the tortillas, one at a time, over medium heat until cooked through or warmed through (depending on if you are using uncooked or already fully cooked tortillas). Once the tortilla is ready, turn off the heat, remove it from the pan, and set aside on a plate. 

Place the neutral oil in a small frypan and warm up over medium heat. Pour in the eggs and scramble until cooked to your liking. Remove the pan from the heat and set aside. Place one tortilla on an individual plate. Add half of the scrambled eggs to the middle of the tortilla. Top with some shredded cheddar cheese, pickled red onions, avocado, and hot sauce. Carefully fold both sides of the tortilla in towards the center, and carefully roll up the tortilla, tucking in the tortilla as you roll to get everything snug and secure. Repeat the same steps for the second burrito. 

Return both baby burritos to the frying pan you warmed the tortillas in and turn the heat on to medium. Cook until each side is a little golden and crisp. Remove from the pan and serve with more hot sauce if you like. 

* Other things that are delicious inside the burrito are pinto beans, salsa, scallions, chives, cotija cheese, and black beans.
