Avocado Toast



Serves 2

  • 2 thick slices of a good country or sourdough loaf of bread
  • Extra virgin olive oil
  • 1 medium ripe avocado
  • 1/2 lemon
  • Red chili flakes
  • Sea salt
  • Black pepper 


Toast your bread until golden. Cut each piece of bread in half so that you have 4 pieces. Drizzle each piece with a little olive oil and a sprinkle of sea salt.

Cut the avocado in half, remove the pit, and thinly slice the avocado flesh With a spoon, scoop out the avocado slices and spread them out equally across each piece of toast.

Drizzle the avocado with a little olive oil and squeeze some lemon juice on it. Add a pinch of red chili flakes to the top of the avocado and season each piece with sea salt and black pepper.
